Difference between black and green olives

Green and black olives are the same species, and the difference lies in their stage of ripeness. Both are robustly bitter when freshly harvested. While green olives are preserved before they are fully ripe, black olives are only preserved after they have fully ripened. Both olives get their rich flavour after they have been preserved in brine for a time.
